Eye of round is ideal if you like lean and unmarbled meat and you are looking for a roast to serve in cream sauce. It is a round, elongated and lean cut of meat resembling a cylinder. At first glance, it is a perfect piece of meat that looks suitable for steaks, but it has the qualities of outside round, i.e. it has tougher and firmer fibres interspersed with collagen. It is suitable for braising when diced or cut into nicely round slices and for roasting whole under a lid with various kinds of sauces. When well aged, it can be used for roast beef or carpaccio, but always cut into thin slices.
