Heel of round is a lesser-known cut of meat taken from the gastrocnemius muscle. It is found above the hind shank and between the top and outside round, to which it is similar in appearance and quality. It is the meatiest shank cut and slightly chewy. Whereas heel of round is a “lean” variant of shank, it has similar uses: boiling, braising and roasting whole under a lid, though it is also suitable for pulled beef. For a butcher, it is one of the best roasts for cream sauce.
