Kačenka (“duck”) is a small muscle that has the same size and shape as a duck breast, so that’s what we call it at the Naše maso butcher shop. It is found under the pelvic bone, on the ligamentous side of the top sirloin butt, which is usually cut off and used for ground meat or braising. The very tender meat is suitable for steak tartare and short-order dishes.
