The Top Sirloin Cup is a very tender meat with a distinctive taste in a typical triangular shape, which, if it is from a properly fattened piece, has a typical tallow covering on the top. It is part of the silverside, but because it is in the upper unstressed part of it, it has a low collagen content. It is great for cooking or when matured whole roasted or cut into steaks.
